Curries and Sabjis (Veggies)

Curry is the cornerstone of Indian cooking.

The term "curry" is used to refer to a sauce or gravy-based dish that typically includes a mixture of aromatic spices, herbs, and other ingredients.

Curry is not a single dish but a category of dishes that vary widely in flavor, ingredients, and preparation methods depending on the region of India they originate from.

Every curry dish starts with the sautéing of aromatic ingredients like onions, tomatoes, ginger and garlic in butter or oil. Into this goes the main ingredients, such as vegetables, meat, seafood or lentils.

It’s common to spice up a curry with a mix of ground and whole cumin, coriander, turmeric, cardamom, cinnamon, and cloves. Thickening agents like ground nuts, cream, or coconut are often added.

Towards the end od cooking fresh herbs like cilantro and mint may be sprinkled in to enhance the freshness and vibrancy of the dish.
